Also known as Jingsu Cuisine, Nanjing cuisine is strict in terms of selecting ingredients. It is meticulous in production, bright in color and changes according to the season. Nanjing cuisine is characterized mainly by its mellow, it tasted neither too salty nor too flat and it gives priority to freshness, fragrance, crispness, and texture. It looks hard but actually it tastes soft. The soup is thick and mellow, fat but not greasy, light but not tasteless, and the dish is tender, smooth and crisp without losing its flavor. The meat separated from the bone is cooked to a pulp, but still retains its shape.

The most boisterous snack streets in Nanjing  are Xinjiekou, Confucius Temple and Shiziqiao.  However, many authentic “foodies” prefer to go  to a small lane called Mingwalang. Mingwalang  offers a combination of local delicacies and flavors from other parts of the country, so it’s seen  as a delicacy paradise by the office workers who  work nearby. If you go to Mingwalang, you’ll  have the chance to taste Yi’s Stewed Noodles with  spicy oil, fragrant, crisp and fresh Fujian Wonton,  Wuhan Three Delicacies Bean Curd Sheet with  characteristic sauces and various textures, rice  served with meat and vegetables on top and  Hongze Pan-fried Dumplings with a caviare fragrance.
